We have selected three wonderful Italian cheeses for your New Year's Eve dinner party:

CHEESE

  • Robiola Roccaverano | Piedmont,  Goat, Unpasteurised. (1 unit - 300g) Small production of a very artisanal and old recipe cheese and milk from their own Camosciata Alpine herd, grazing freely on pastures surrounding the farm. Sweet and nutty with a creamy richness of the milk when young, becoming fruity and more goaty with a little ripening.
  • Parmigiano Reggiano | Reggio Emilia, Cow, Unpasteurised (350g) - Aged over 36 months. Made with unpasteurised milk from accredited dairies within the allotted region, the crust is brine washed, then rubbed with olive oil and slowly matured under strict supervision. Only cheeses with the Consorzio markings are the true Parmigiano.
  • Gorgonzola Dolce | Lombardy, Cow, Pasteurised. (350g) - Creamy and lusciously silky, produced from curds collected from a single milking. The main distinguishing characteristic in Gorgonzolas is their mould; whilst many blues use penicillium roqueforti, Gorgonzola utilizes the subtler penicillium glaucum, which balances the more minerally hits with sweeter, nuttier notes.
