This board is for the adventurous cheese lover in your life, perhaps you! The first 60 orders will get a piece of our very limited stock of Blue de Termignon so get your order in quick! Orders placed after these will get another beautiful small production blue, the high mountain Bleu de Queyras from Hautes-Alpes. This board more generally represents the best of what we do: seasonal, farmhouse, pasture fed, raw milk, local starter culture and high altitude terroir cheeses with strong connections to regional culture and history. Each cheese has been a real discovery for us and provides more than a glimpse of the uncompromising regional cheesemaking of in centuries past. 

These are the cheeses I’ll be waxing lyrical to about to customers in the Cheese Room over the festive period and indeed the ones I’ll be taking home! They can be enjoyed as a board or, as I like to do, savoured one by one with a different glass of wine in quiet moments over the course of Christmas Eve, Day and Boxing Day.

CHEESES

  • Soumaintrain Ferme Le Roux, Yonne, Burgundy, Unpasteurised Cow's Milk
    Soft Camembert size cheese lightly washed with Annatto (orange coloured vegetable extract) & with scatterings of white bloomy moulds. The taste is rich, mellow & fruity like clotted crème fraiche. We wash the cheeses in a light white wine before finishing the maturing process in our cellars.

  • Camembert de Normandy, Ferme le Trefle d'Auge, Normandy, Unpasteurised Cow's Milk
    Traditional cheese with a soft supple texture & bloomy white rind tinged with rust to show through (denotes matured on straw). Best eaten when moist & not too melting. A fruity aroma with a rich earthy flavour.

  • Stonebeck, Nidderdale, North Yorkshire, Unpasteurised Cow's Milk
    A fascinating reinvention of an ancient recipe made by Sally and Andrew Hatton accessing an old recipe together with Mrs Peacock, a retired local cheesemaker. It has taken over 2 years to bring this cheese to more than the immediate local shops, and the Northern Dairy Shorthorn cattle produce a wonderfully fresh and grassy tasting cheese. Very limited supply but worth every bite.

  • Comte D'Estive, Franche-Comte, Unpasteurised Cow's Milk
    At least 18 months but we try to always have the 24 month cheeses. Ivory coloured pâté with a smooth, nutty flavour, & a crust golden brown. In the style of a rich & distinct Gruyère with a hint of caramel sweetness. We ‘taste’ select cheeses twice a year & have them kept for us in traditional cellars beneath the dairy where they are made.

  • Bergfichte, Toggenburg, Unpasteurised Cow's Milk
    From the traditional Tilsiteer cheesemaking region, this cheesemaker, Willi Schmidt decided to work with the farmers in the area to create a new cheese. Rather like the Vacherin using a bark collar to hold the cheese together, the flavours are nutty & fruity with a rich almost clotted cream texture. A lovely ‘breakaway’ cheese.

  • Bleu de Termignon, Haute Savoie, Unpasteurised Cow's Milk

    The Bleu Termignon is the ultimate seasonal fine cheese that appears in a select few cheesemongers in the world in November. This ancient marvel, unchanged in production for centuries, is made from the milk of one tiny herd grazing at altitude, so high in fact that production of the cheese can only commence once the snow has melted at 2000m in June. The size of the herd and the narrow window of production means that vanishingly few wheels are made each year. The milk is fermented in old wood churns with the previous day’s whey and no blue mould is added, it occurs naturally…sometimes. If you got in a time machine and went to 1600 you would see no change in fundamental method. This all means that some wheels are criss-crossed with blue mould and others have just a smattering or none at all.
