This festive season a few of our senior cheesemongers - Max (Senior Cheesemonger) and Patrick (Warehouse Manager) and David (Head Cheesemonger) have been putting together a cheeseboard that represents what La Fromagerie does best: sourcing small production, raw milk, seasonal cheeses from some of the best cheesemakers, traditions and terroirs in the world. 

These cheeses showcase the very best of ancient cheesemaking traditions, both wild and carefully curated pastures, raw milk and local starter cultures and the art of slow, iterative, secondary fermentation of cheese: affinage.

CHEESES

Tomme de Fleurette | Wadtlander, Alpen. Cow, Unpasteurised. 1 unit
From the Canton du Vaud in Western Switzerland this tender little morsel has a thin bloomy rind clinging onto the almost melting pâté. Made from Unpasteurised milk, the centre of the cheese is almost oozing milk & is best enjoyed on the young side

Sao Jorge | Azores, Portugal, Cow, Unpasteurised. 200g
One of the rare cow's milk cheeses from Portugal, from the beautiful island of Sao Jorge. The cheese has a lovely sharp nuttiness, redolent of cheddar, with a simmering undertone of the farm that extends the depth of flavour, and lends a persistent finish.

L'Etivaz | Pays D'Enhaut, Swtizerland, Cow, Unpasteurised - 200g
During the summer & early autumn the cattle graze on more than 130 alps between the glaciers of Les Diablerets & the vineyards of Lake Geneva. The cheeses are matured in a modern cellar in the village of Etivaz. Soumaintrain | Gaec Leclere, Burgundy. Cow, Unpasteurised. 1 unit
Soft Camembert size cheese lightly washed with salt/water brine developing scatterings of white bloomy moulds as it ripens. The taste is rich, mellow & fruity like clotted crème fraiche. 

Herve Vieux Moulin | Liege, Belgium - Cow, Unpasteurised. 1 unit
The Herve Vieux Moulin is a new raw milk cheese by the Herve cheesemakers. We have the piquant version which is left to mature for longer and the rind is washed more often in order to obtain the wonderful powerful taste.  

Bleu de Queyras | Hautes Alpes, Cow, Thermised. 200g
The local cheeses from the Haute Alpes are mostly hard ewe and goat with a few softer styles.  However the blue is really delicious with a light, floral nuttiness that is gentle and soft when young; becoming spicier with maturing.
