SUGRUE X SHRUB X LA FROMAGERIE
A TASTE OF ENGLISH SUMMER
Wednesday 18 June  2025 7 – 9.30pm

Join us for this special supper with wine pairings celebrating summer produce from the south of England at its best. We will be featuring wines from the Sugrue Vineyard in the South Downs, one of England’s foremost winemakers along with produce from Shrub. The wine, fruit and vegetables for the evening will share much of the same limestone based soil and bedrock and of course the dry sunny climate that much of the south east of England enjoys. The menu will be the perfect encapsulation of the ‘rule’ La Fromagerie has been employing since 1991, ‘what grows together goes together’.

Harry from Shrub be joining us for supper & conversation on summer produce and the growers they work with. Max will be talking all things cheese, and Alessandro has devised a very special menu of Shrub produce, summer on a plate.

THE TROUBLE WITH DREAMS 2020 (name has a cute story..)Sugrue Vineyard, Wivelsfield Green, South Downs. 60% Chardonnay  40% Pinot Noir
Sparkling Wine. Award winning wine maker Dermot Sugrue is one of England’s foremost sparkling winemakers. Grapes are from 3 separately placed vineyards covering east and west Sussex.
This vintage is proving an exceptional one, due to long warm spells, producing a superb wine of advanced maturity & expressive generous taste.  There is forward fruit with complexity offset by chalky acidity giving a tense back bone balanced by a low residual sugar dosage

SALT EIRE
, Sugrue Vineyard, Wivelsfield Green, South Downs.
100% Chardonnay
The vines are planted on chalk and clay loam and have enjoyed good weather conditions to give the grapes a real intensity.  After pressing the lees (residue of the vine) are aged for a further 6 months in the tank before bottling and ageing for 18 months in a mixture of new and old French barriques (small size barrels).  The name on the label gives a nod to the winemaker Dermot's Irish heritage, and the exciting multi-vintage, solera aged Chardonnay can challenge fine French white burgundies with its complexity underpinned with the Sugrue team's hallmark citrus & saline freshness.

About Sugrue South Downs: We have just started working with Sugrue vineyards and winery, headed up by the Irish winemaker Dermot Sugrue formerly of Nyetimber and Wiston now considered one of our biggest talents (if not the biggest), in the country. His Sparkling wines are the most consistently high scoring made in the UK across the wine press, championed by among others, Jancis Robinson. His still chardonnays are spoken about with reverence and compared to Grand Crus Chablis.

About Shrub: La Fromagerie has been working with Shrub in Sussex since its inception in 2020. They source the best fruit and vegetables from fifty market gardens and farms in the South East specialising in regenerative farming and unique varieties.
There is a growing demand for complete transparency and integrity in our supply chains, not just for our health, our natural world and wild places, but also our local economies, cultures and a secure food future. Shrub facilitates the relationships between producers and chefs in a modern way, with a nod to the past.
