SCIMUDIN, LOMBARDY | Unpasteurised Cow's Milk
Delicate cow’s milk cheese in the style of Brie. The bloomy white rind houses a deliciously silky, smooth pate with a light nutty taste and a gentle mushroom aroma. Perfect as part of a cheeseboard selection from Northern Italy – with Asiago, Montasio, Robiola, and Gorgonzola – or on its own melted over Polenta.
SOUMAINTRAIN, BURGUNDY | Unpasteurised Cow's Milk
Soft Camembert-sized cheese lightly washed with white wine and brine, resulting in a pink-orange rind, several shades lighter than its regional cousin Epoisses. The taste is rich, mellow and fruity like clotted crème fraiche. We continue to wash the cheeses in a light white wine before finishing the maturing process in our high humidity cellars.
TOMME DE BREBIS BARETOUS, LANNE EN BARETOUS, PYRENEES | Unpasteurised Sheep Milk
Hidden in the hills of the Pyrenees is a charming old stone farmhouse Ferme Carrere dit Coustie. The 300 sheep give their milk for cheesemaking from December to June when they are then sent on their ‘vacation’ to roam the hills of the Barétous valley. A few sheep are kept in the farm for a little more cheesemaking to keep the stocks from depleting. A wonderful silky nutty rich tasting cheese. Allergens: contains EGG
LIVAROT, NORMANDY | Unpasteurised Cow's Milk
Semi-soft cheese with a firm golden-orange washed rind, vibrant, bound with five strips of raffia, giving it its nickname “The Colonel." Colloquially referred to as 'the poor man's meat,' the texture is supple and springy, with scattered pinholes, a pungent aroma and a rather spicy, unctuous profile, requiring a bold red wine, a strong cider, or a slug of Calvados (try our farmhouse Pierre Bauche apple or pear variety).
STICHELTON, WELLBECK ESTATE, NOTTINGHAM | Unpasteurised Cow's Milk
Joe Schneider is making his version of a very regional blue using milk from the estate and using very small quantities of starter and rennet. It has a rich, dense and creamy paste and a delicately spiced blue, rather than an attack. Throughout the year the flavours can range from the sweet and vegetal to intensely meaty, with aromas like bacon fat. Tasting alongside the Colston Bassett Stilton you recognize this cheese has its own individual character and is not a Stilton, but a true original.

When placing your order, please select a delivery date that is ideally 2 days before you are planning to enjoy the tasting. When your order is dispatched we will send you a pre-recorded cheese tutorial by WeTransfer, please download, check it is the correct recording, and store until you are ready to begin the tasting. The link will expire in 3-5 days of receipt. Do also check your spam folder.
If you have not received the box by 11am the day before your tasting email us and we will do our best to track the package.
