A Most Decadent Blue...

Gorgonzola Naturale and Dolce were a particular quest for me to get artisan, hand made and above all the best representation of this beautiful cheese.
I found a fourth generation producer in Lombardy on a visit to the region in 1993. They were surprised I had found them, but I had read about their cheese in a Slow Food cheese directory and followed up with a visit while I was in the vicinity.
What differentiates their cheese from the big manufacturers is not just the quality of the taste but the way the blue moulds spread, either densely parsleyed in the Naturale or bleeding gently into the creamy, silky Dolce.
This is a truly exceptional cheesemaker dedicated to their craft and like independent cheesemongers have pride and joy in their product. This may be a familiar cheese and one you may have heard of as Dolcelatte, but don't be fooled, getting the real thing, from a dedicated cheese shop will be money well spent as well as delicious and satisfying.
Whether as a stand alone cheese with a glass of Champagne - it can be dry or semi sweet - or as part of a mixed cheeseboard, it won't overpower, it will enhance and above all it will be memorable.
