Welcome to ℍ𝕠𝕞𝕒𝕘𝕖 𝕥𝕠 𝔽𝕣𝕠𝕞𝕒𝕘𝕖, our new series dedicated to celebrating the wondrous world of cheese and those who love it as much as we do. Over the coming months, we’ll be interviewing friends of LA FROMAGERIE to ask the all-important questions; unearthing some of the weird and wonderful idiosyncrasies that go hand in hand with an infatuation with food. Our first guest is iconic chef extraordinaire, PIERRE KOFFMANN. One of only a handful of chefs in the UK to have been awarded the coveted three Michelin stars at his restaurant La Tante Claire in London, Mr Koffmann has also trained an astounding number of top chefs – Tom Aikens, Gordon Ramsay, Marco Pierre White, Marcus Wareing, Bruno Loubet, Tom Kitchin, Jason Atherton, to name but a few (his protégés have now amassed more than 20 Michelin stars between them). Koffmann has left an indelible mark on the culinary world with his innovative yet traditional French cuisine. Known for his mastery of humble ingredients, such as his famed pig's trotter dish, 'au pied du cochon a la Pierre Koffmann', his heart still beats loudly for the traditional regional food of Gascony; a place where we source many of our products.
