A full week of warmer, brighter and overall more joyous weather is ahead of us.
With that we have news that a small batch of lactic sheep/goat’s milk cheeses from all across France and the UK, will arrive any day now.
In the coming weeks, lookout for cheeses such as Lingot de Cocagne, St. Nicolas De La Dalmerie, Petit Jabron, Pelardon, Yr Afr, Soft Joyce, Pygthle will be gracing the shelves of our Cheese Room
The first to arrive, as mentioned is Lingot De Cocagne (pictured). This is a delicate lactic sheep’s milk cheese from La Ginestarie near Tarn (southwest). Dragan Teotski, a Macedonian cheesemaker, was looking to recreate cheese from his childhood. He acquired a small herd of sheep and a dairy in 1983, off to the races he went. The delicate rind on his cheeses give way to a beautiful, milky, sweet paste. The flavours are gentle and light, a perfect start to any board, or Spring.
All of these cheeses are special in their own right, so as they arrive, they will get the proper care and attention they deserve.
