CHEESES

  • Sinodun Hill | Oxfordshire, Pasteurised Goat's Milk - 1 unit. Made by Rachel Yarrow and Fraser Norton from their own herd of pedigree Anglo Nubien goats and additional milk from another local herd. In the shape of a truncated pyramid with a nutty geotrichum rind. The pate has a mellow tangy flavour, with faint citrus notes.
  • St Jude | Suffolk, Unpasteurised Cow's Milk - 1 unit. Made by Julie Cheyney in Suffolk, the milk is slowly turned and gently turned into curds with little intervention. Simply lifting the curds and ladling into moulds, turning daily until ready for sale. The flavours of the pasture are intact giving the cheese an earthy richness becoming more evident as it ages.
  • Tomme de Brebis Baretous |  Pyrenees, Unpasteurised Ewe's Milk (250g). Liberty Carrere Dit Coustie makes this wonderful silky, nutty, rich tasting cheese with her husband and mother-in-law. Hidden in the hills of the Pyrenees is a charming old stone farmhouse. The 300 sheep give their milk for cheesemaking from December from June when they are sent on their vacation to enjoy the hills of the Baretous Valley. Allergens: Contains EGG
  • Gubbeen | County Cork, Pasteurised Cow's Milk (250g) - The micro climate of this region produces some fine examples of washed rind cheeses, & this one is no exception. Giana Ferguson’s cheese is made with pasteurised cow’s milk now using vegetable rennet, but still has the supple springy texture, with the wrinkled washed rind quite firm to the touch.
  • Roquefort Carles | Rouergue, Unpasteurised's Ewe's Milk (250g) - Delphine Carles took over from her father to carry on the Carles family name. Like other Roquefort productions, the milk comes solely from the Lacaune breed – whose yield is notably large compared to other breeds – creating an intense, powerfully flavoured cheese. Perhaps fruitier and better balanced than other Roqueforts, the pate switchbacks beautifully between the creamy curds and grittier blue moulds.
