For Spring, our Senior Cheesemonger - Max Melvin - has put together his ideal cheese and wine board for this time of year.

These cheeses showcase the best of seasonal, raw milk, local starter and pasture fed cheeses coming into their own at this time of year. We’ve chosen an unconventional cheeseboard order that focuses on the contribution primary, secondary fermentation and further affinage makes to the flavours and textures of the cheese. One for the adventurous cheese enthusiast! 

The cheeses on this board pair beautifully with the Ugo Sur Le Fil Guirardel 2016. It was hard to choose a wine that equalled the world class fortified wine we chose for the Winter Festive Cheese and Wine Board but I think I've done it! The wine really does meet the cheese in terms of complexity of flavour and freshness and the producer's approach to terroir. This may be one of the last available cuvees of this world class wine as the couple are shortly moving to the Basque Country.

CHEESES

  • Robiola in Foglie | Piemonte, Goat, Unpasteurised - 1 unit (250g). Small, artisan production where the cheeses are wrapped in either fig leaves, chestnut leaves or vine leaves depending on the season. (The ancient technique of wrapping soft cheeses in leaves was one of the first ways of keeping the natural penicillium moulds healthy and in balance without much intervention. Expect these beautiful edible moulds to be growing on the leaves and on the rind of the cheese underneath)

  • Pelardon | Cevennes,  Unpasteurised Goat's Milk - 1 unit (60g). A thick, medallion-shaped soft cheese with a natural white rind that, with maturing, becomes dotted with blue moulds. A traditional farmhouse cheese with gentle goaty, nutty tastes and a fudgy texture.

  • Sao Jorge | Azores, Unpasteurised Cow's Milk. One of the rare cow's milk cheeses of Portugal, from the beautiful island of São Jorge in the Atlantic archipelago of the Azores. The cheese has a lovely sharp nuttiness, redolent of cheddar, with a simmering undertone of the farm that extends the depth of flavour, and lends a persistent finish.

  • Cupidon de Brebis | Col de Fach, Loubieres, Unpasteurised Ewe's Milk. 1 unit. A delightful small creamy cheese with a band of spruce to give a sappy earthy finish.  A perfect cheese for those who love rich, melting styles

  • Stichelton |  Wellbeck Estate, Nottingham, Unpasteurised Cow's Milk (200g).  Joe Schneider is making his version of a very regional blue using milk from the estate and using very small quantities of starter and rennet. It has a rich, dense and creamy paste and a delicately spiced blue, rather than an attack. Tasting alongside the Colston Bassett Stilton you recognize this cheese has its own individual character and is not a Stilton, but a true original.

WINE

Ugo Sur Le Fil Guirardel 2016, Domaine Guirardel, Monein, Pyrenees Atlantique

70% Petit Manseng, 30% Gros Manseng

Ugo, Domaine Guirardel is run by Françoise Casaubieilh and Pierre Coulomb In Monein in the Pyrénées-Atlantiques in prime Jurançon country. Françoise and Pierre are some of the most exciting, experimental and respected wine makers in France, having both set on making the Jurançon region the next Jura. Petit Manseng grape (the child of Jura’s Savagnin as well as parent of Gros Manseng) is late harvested and 'passerillé' or dried by the Foehn winds. Usually destined for sweet ‘moelleux’ Jurançon, the juice is fermented to become bone-dry, something previously thought impossible without producing unacceptably high alcohol levels, making this wine the effective French white wine counterpart to Amarone. 

The wine was aged in old 400ltr oak barrels for two years & bottled without any sulphur. It has a complex expressive nose of candied quince, ripe apricot, tropical fruits, cinnamon, & dried vanilla pod. The powerful multi-layered mouthfeel is perfectly balanced by mouth-watering bitters, zesty acids & a lengthy minerality. Recalling the nose of sweeter Jurançons and the bracing acidity, texture, salinity & nuttiness of Jura dry Savagnins.
