"This board is for the adventurous cheese lover in your life, perhaps you! 

This board represents the best of what we do: seasonal, farmhouse, pasture fed, raw milk, local starter culture and high altitude terroir cheeses with strong connections to regional culture and history from Cistercian monks in Belgium to the revival of wild pasture Wensleydale in North Yorkshire. Each cheese has been a real discovery for us and provides more than a glimpse of the uncompromising regional cheesemaking of centuries past.

These are the cheeses I'll be waxing lyrical about to customers in the Cheese Room over the festive period and indeed the ones I'll be taking home! They can be enjoyed as a board or, as I like do, savoured one by one with a different glass of wine in quiet moments over the course of Christmas Eve, Christmas Day and Boxing Day.

The cheeses on this board pair beautifully with the Amontillado del Castillo, Almacenista 2021 - a far cry from the sweet cream sherries known to the British in the 20th century. This is a bone dry, complex, bone fide fine wine. I fell in love with the classic pairing of 'flor aged' wines - savoury, nutty dry wines that have been aged under a veil of yeast, almost like a brie! - with cheeses when Patricia introduced me to the legendary pairing of Comte and Vin Jaune. A pairing that lifts each half to a new height.

Since then we have discovered the match of fine dry sherries, the best of which are the equal of the Vin Jaune when it comes to complexity and ability to lift nearly all categories of cheese. Sarah Jane Evans MW, who specialises in Spanish wine (and sherry in particular) has named this bottle perhaps her favourite wine of any category and price in the world. We're lucky to get hold of a wine of this quality that is taken from a solera system of just 38 casks.

CHEESE

  • Elrick Log | Lanark, Scotland. Unpasteurised Goat's Milk. 1 unit (190g). Named after the nearby village of Esrickle, this goat's cheese has a wonderful creaminess, that is both rich and herbaceous with a salty tang to the end taste.

  • Stonebeck | Nidderdale, North Yorkshire, Unpasteurised Cow's Milk (200g). It has taken over 2 years to bring this cheese to more than the immediate local shops, and the Northern Dairy Shorthorn cattle produce a wonderfully fresh and grassy tasting cheese. Very limited supply but worth every bite.

  • El Buen Pastor | Orepesa, Unpasteurised Sheep Milk (200g).   This is a signature cheese for La Fromagerie. The whole story, from the father/son family tradition as Shepherds and cheesemakers, to the land they farm, the number of sheep in their flock, and finally the seasons that spell out the taste of the cheeses. 

  • Wrangebacksost | Vattern Lake, Hjo, Thermised Cow's Milk (200g).  Sweden's oldest brand of cheese – and the recent winner of 'Best Cheese in Sweden' – this cheese has a fascinating history. The flavours are rich and fruity and complex, with a unique sourness, while the aroma, due to the maturation on the boards, has a delicate farminess.

  • Herve, Belgium, Unpasteurised Cow’s Milk (1 unit - 200g). The milk for this cheese is sourced only from the appellation area in the province of Liege. We have the piquant version which is left to mature for longer and the rind is washed more often in order to obtain the wonderful powerful taste.

  • Devon Blue | Totnes, Devon, Pasteurised Cow's Milk (200g). Rich and loose-textured and slightly crumbly, this blue is made from Friesian milk collected not far from the dairy. The nutty, tangy blue veins bleed gently into the pate, which is rather moist, with a full flinty and earthy aroma and a dense buttery lively taste.

WINE

  • AMONTILLADO DEL CASTILLO, ALMACENISTA 2021 - 500ml
    Lustau, El Puerto de Santa Maria, Andalusia
    Grapes: 100% Palomino Fino, 21.5% ABV

    This solera of Amontillado consists of just 38 casks. Aged for an average period of 18 years so the flor eventually dies off allowing oxidation to occur, resulting in the widest possible array of aromas to be found in sherry. Aromas of hazelnut praline and candied orange zest with smoked wood in the background. Dry, pungent & flavoursome, with refreshing acidity. Nutty with a salty spiced touch & an extremely long finish. Unquestionably a fine wine with a level of complexity rivalled only by Vin Jaunes at many multiples of its cost. One to savour. Serve between 13-14 degrees C.
