Cousance-les Triconville, Unpasteurised Cow Milk

Le Barisien is a raw cow’s milk cheese, with a soft paste and bloomy rind, referred to as a triple cream as it is enriched with fresh cream. Produced by La Fromagerie Donge based in the Meuse department in the East of France.  Its flavour is mellow when young, intensifying as it matures, with rich hazelnut and mushroom notes, enforced with the taste of fresh cream.
