Our founder, Patricia has chosen her favourite cheeses for this time of year to create a wonderful Autumn cheeseboard.  The cheeses on this wine pair beautifully with Chateau Beaulieu's L'Oratoire with its hints of spice and chocolate.

CHEESES

  • Chabichou | Poitou-Charentes. Unpasteurised Goat's Milk - 1 unit (150g). A soft, fresh tasting cheese, shaped like a gently tapered cylinder. The texture is smooth yet quite close-textured. Produced traditionally with a lovely aromatic rind.
  • Bix | Oxfordshire. Pasteurised Cow's Milk. 1 unit (100g). Produced at Nettlebed Creamery by Rose Grimond. Made from certified organic milk taken from a herd of crossed Montbeliarde, Swedish Red & Holstein Friesians. A triple cream based on northern French cheeses like Brillat Savarin or Chaource, the pate is dense and rich with a mouthfeel not unlike butter.
  • Hualdo Manchego | Toledo, Unpasteurised Ewe's Milk. 200g. A classic cheese where we choose 7 month aged versions, some of which we hold back to mature longer. The slow process of making the cheese allows the rind development to bring out the qualities of the milk, giving the cheeses their unique flavour profile, from fruit, sweet, savoury and nutty. It’s a cheese that keeps on giving.
  • Gevalo | Toledo, Pasteurised Goat's Milk. 1 unit (380g). This is a soft, lactic creamy textured cheese, which has been brine washed, giving the rind a slightly sticky quality. There are hints of sweet cream and fresh yoghurt with subtle vegetal notes from the fermentation, along with earthy, woodland mushroom flavours. 
  • Bleu des Basque |  Pays-Basques, Pyrénées, Ewe, Pasteurised. 200g. An unusual cheese from the mountain region of Pays-Basques. This is a semi-hard cheese with the blue veins "parsleyed" through the dense, rich, mellow cheese. A rare treat as blue cheeses are not normally made in this area.

WINE

  • La Cuvee de L’Oratoire 2010
    Saint-Sauveur de Meilhan, Lot et Garonne, nr Bordeaux
    Cabernet Franc, Sauvignon, Merl0t

    Agnes & Robert Schulte’s top wine from 40 year old vines. Rigorous selection produces low yields, & all the above grapes are the dominant vines with Syrah, Malbec & Abouriou also featuring. Matured for 12 months in 75% new oak barrels. Deliciously dense with exceptional concentration.  Fruity with spice & chocolate and good tannin strength. Open and decant at least 4 hours.
