Patricia, our founder, has curated a great selection of her favourite cheeses to be enjoyed at this time of year. A very special board indeed. 

"My Christmas Cheese Board this year has taken me on a sentimental journey through 35 years of La Fromagerie.  But much more than that it is about gathering together of the 'clans' and eating and drinking well with lots of fun in-between.  A cheeseboard comes into its own and having just done a virtual tutorial it brought back to me how much interaction plays its part with the cheese course and great conversation flows.

I like to always start with a goat cheese to cleanse my palate and enjoy the fresh, tangy bright taste of the cheese, and Pyramide from Charente Poitou is just that kind of cheese, but with bags of rich density to open the taste buds in readiness for the next cheese which is a classic but nevertheless pure joy, Duckett's Caerphilly.  This cheese has a marvellous crumble breakdown with a salty hit to the gentle creme fraiche earthiness, and reminds me of all that is great about British territorial cheeses.  

The high alpine cheeses have enjoyed a perfect climate over the last few years and our signature cheese Beaufort Chalet d'Alpage has been tasting more fruity and bosky than ever.  It is elegant with a slow release of flavours and a texture that lingers; it's the sort of cheese you keep going back for more.  

I had a wonderful trip to the hills above Madrid back in late Spring, and came back with a selection of cheese that has really delighted everyone, and I've chosen Gevalo for my board as this is the one that lit up the room when it was tasted.  It's a meltingly rich and almost sweet goat's cheese that says so much about its place, but also the happy goats giving such beautiful milk.

Finally I finish with a blue, and we have been so enjoying Stichelton lately I couldn't not have it on my board this year.  It's deep blue threads through the mineral rich cheese and after all the other cheeses this will bring the flavours together for a powerful finish".


CHEESE

  • Pyramide Blanche, Berry, Unpasteurised Goat’s Milk. A close-textured quite dry pyramid, with light blue moulds after a little ripening, & when fully matured the darker grey moulds cover the cheese & the dense & crumbly textured cheese tastes delicately fruity with an earthy nuttiness.

  • Ducketts Caerphilly, Somerset, Unpasteurised Cow's Milk. Fresh, crumbly, mineral rich flavours bring back the traditional style of this cheese which will marry well with blue cheeses and goat's milk cheese both hard and soft.  A lovely acidity to refresh the palate and partner cider and wine.

  • Beaufort Chalet D'Alpage | Savoie, Unpasteurised, Cow. The raison d'etre for La Fromagerie, this high mountain cheese has a sweet almond nuttiness.

  • Gevalo | Toledo, Pasteurised Goat's Milk. 1 unit (380g). This is a soft, lactic creamy textured cheese, which has been brine washed, giving the rind a slightly sticky quality. There are hints of sweet cream and fresh yoghurt with subtle vegetal notes from the fermentation, along with earthy, woodland mushroom flavours. 

  • Stichelton |  Wellbeck Estate, Nottingham, Unpasteurised Cow's Milk (200g).  Joe Schneider is making his version of a very regional blue using milk from the estate and using very small quantities of starter and rennet. It has a rich, dense and creamy paste and a delicately spiced blue, rather than an attack. Tasting alongside the Colston Bassett Stilton you recognize this cheese has its own individual character and is not a Stilton, but a true original.
