CHEESE

  • Mothais a la Feuille | Poitou-Charentes, Unpasteurised, Goat. A thick white disc covered in a protective sycamore or vine leaf. Farmhouse made since the 19th century, the rind is wrinkled with a slight bloom, due to the high humidity in which it is initially matured.
  • Abbaye de Tamie | Savoie, Unpasteurised, Cow. A monastery-made mountain cheese, similar to a Reblochon, but thicker, with the same rich creamy flavour, but less nutty and more robust and earthy in taste. The monks use methane extracted from the cheese's whey to heat the Abbey.
  • Beaufort Chalet D'Alpage | Savoie, Unpasteurised, Cow. The raison d'etre for La Fromagerie, this high mountain cheese has a sweet almond nuttiness.
  • Epoisses Maronniers | Burgundy, Unpasteurised, Cow. Such a rarity that we only get a small quantity but this farm is the last single herd production of Epoisses in the Cote d’Or. The cheeses are washed in Marc de Bourgogne to give a ‘juicy’ finish on the rind. Rich, mellow & utterly delicious. Something to savour.
  • Roquefort Carles | Rouergue, Unpasteurised, Ewe. Small production of a strong artisan-made well-marbled blue cheese. Handmade, the producers extract their own penicillium roqueforti from rye bread baked in-house. Like other Roquefort productions, the milk comes solely from the Lacaune breed creating an intense, powerfully flavoured cheese.
