A tasting journey exploring the effects of the changing seasons on the textures, flavours and even the colour of artisan cheese.
We often talk about the age and the ripeness of cheese, however for this workshop we are discussing the subject of WHEN, during the year, the cow, sheep, goat or buffalo is milked. Whilst a far less talked about subject it may in fact, be the one of the most important factors in determining a cheese’s quality and flavour.
Discover why spring and summer cheeses are so prized and the cheeses that break this rule entirely!
We will be tasting cheese at the height of their ‘season’ along with seasonal accompaniments paired with two regional wines.
