Our cheesemongers have created a wonderful selection of Spring cheeses, all made with vegetarian rennet. 

CHEESES

  • Dorstone | Herefordshire, Goat, Pasteurised - 1 unit (180g). An ash-coated drum with a lovely light, fudgy texture & fresh cobnut flavours. A perfect cheese to start a cheese tasting and also as a lunchtime cheese with crusty bread and salad. 
  • Wigmore | Berkshire, Thermised Ewe's Milk (200g).  A sheep’s milk cheese using vegetable rennet, & with natural wrinkled grey/white moulds scattered between bloomy moulds on the crust. The sappy fruity rich flavour is quite sharp & crumbly when young, but with maturing the edges begin to melt making it a velvety rich mellow tasting cheese.
  • Old Groendal | Roeselare. Pasteurised Cow's Milk (200g).  The flavours are full bodied with and mature with a little sharp caramel edge, and the texture is dense with a lovely crystalization with some creaminess breaking down.
  • Serra D'Estrella | Beira, Unpasteurised's Cow's Milk (200g). An artisan-made mountain cheese coagulated with rennet extracted from the Cardoon plant (a wild thistle). The milk will separate into solid curds after about twenty minutes of exposure to the rennet, enough time for the plant to imbue its flavours – sharp, tangy, floral overtones give a delightful contrast to the smoothness of the curds.
  • Devon Blue | Totnes, Devon, Pasteurised Cow's Milk (200g). Rich and loose-textured and slightly crumbly, this blue is made from Friesian milk collected not far from the dairy. The nutty, tangy blue veins bleed gently into the pate, which is rather moist, with a full flinty and earthy aroma and a dense buttery lively taste.
