We have created a wonderful fondue recipe for St Patrick's Day, combining three fantastic Irish cheeses. This recipe feeds 2 people. Please increase your numbers depending on the size of your party.

CHEESES

  • Coolea | County Cork. Pasteurised Cow's Milk (150g). Made from milk of Meuse Rhine Issel cattle – a well-known breed in Holland and Germany – this Gouda-style cheese in made in a traditional Dutch manner. We love the extra-aged versions of the cheese, when the nuttiness becomes pronounced and the crystallisation unveils a salted-caramel-depth.
  • Temple Gall | County Cork. Unpasteurised Cow's Milk  (150g).  Sweet, nutty flavours mingled with fruit giving a delicate richness to the cheese, which pairs beautifully with white wines. ALLERGEN: protein Lysozyme. EGG is part of the rind.
  • Gubbeen | County Cork, Pasteurised Cow's Milk (150g) - The micro climate of this region produces some fine examples of washed rind cheeses, & this one is no exception. Giana Ferguson’s cheese is made with pasteurised cow’s milk now using vegetable rennet, but still has the supple springy texture, with the wrinkled washed rind quite firm to the touch.
