A raw semi-hard goat’s milk cheese, Tinto is modelled on a Gouda style but matured for between two to six months. A firm favourite amongst cheesemaker Selina Cairns and children, Tinto has subtle warm nutty flavours developing into more meaty, rich and fatty notes as the cheeses mature.
