For Spring, our Senior Cheesemonger - Max Melvin - has put together his ideal cheeseboard for this time of year.

These cheeses showcase the best of seasonal, raw milk, local starter and pasture fed cheeses coming into their own at this time of year. We’ve chosen an unconventional cheeseboard order that focuses on the contribution primary, secondary fermentation and further affinage makes to the flavours and textures of the cheese. CHEESES

  • Petit Jabron | Hautes Provence, Unpasteurised Goat's Milk - 1 unit (80g). A small fresh medallion with a thin natural rind. Available from April to the end of October, this smooth velvety cheese typifies summer in the south of France. 
  • Pelardon | Cevennes,  Unpasteurised Goat's Milk - 1 unit (60g). A thick, medallion-shaped soft cheese with a natural white rind that, with maturing, becomes dotted with blue moulds. A traditional farmhouse cheese with gentle goaty, nutty tastes and a fudgy texture.
  • Templegall | Auvergne, Unpasteurised Cow's Milk - 250g. Made from the milk of Aubrac and Simmental cattle, Laguiole has a smooth texture and a fruity clean taste, rather like English cheddars (probably the most well-known uncooked pressed cheese). 
  • Langres Fermier Remillet | Champagne, Unpasteurised Cow's Milk - 1 unit (180g). The only farm making an unpasteurised milk cheese in the original area of the region for this production. 140 Brune des Alpes cows graze on pasture all year and in winter supplemented by Alfafa, Hay & cereals grown on the farm. This farmhouse handmade cheese is a little stouter with a paler washed rind, and its creaminess is just beginning to show beneath the outer rind to retain the fudgy centre
  • Devon Blue | Totnes, Devon, Pasteurised Cow's Milk (200g). Rich and loose-textured and slightly crumbly, this blue is made from Friesian milk collected not far from the dairy. The nutty, tangy blue veins bleed gently into the pate, which is rather moist, with a full flinty and earthy aroma and a dense buttery lively taste.
