For summer, one of our senior cheesemongers, Max Melvin, has put together his ideal cheeseboard for this time of year.  Max has found the perfect wine pairing with La Grange Tiphaine Clef du Sol.

These cheeses showcase the best of seasonal, raw milk, local starter and pasture fed cheeses. One for the adventurous cheese enthusiast!

For summer we've chosen cheeses that not only reach their peak now but that also come into their own in warm weather! This is due to the use of lactic fermentation to produce the curd or in secondary fermentation in the vat or mould. This approach gives each of these cheeses a beautiful underlying acidity that keeps everything fresh - the key to enjoying cheeses in warm weather! Crack open a bottle of something cold and enjoy!

CHEESES

  • St Domnin Lavande | Hautes Alpes Provence, Unpasteurised Goat's Milk - 1 unit. The spirit & taste of Provence comes through with this unctuous flaky textured goat cheese with a sprig of Lavender on top.
  • Crottin de Chavignol | Sancerre, Unpasteurised Goat's Milk.  A small flattened ball of crumbly-textured cheese with a rich smooth taste. Ideal for grilling when just a hint of moulds appear, but also delicious upon further maturation when the blue-grey velvety moulds cover the cheese.
  • Wrangebacksost | Vattern Lake, Hjo, Thermised Cow's Milk - 250g.  Sweden's oldest brand of cheese – and the recent winner of 'Best Cheese in Sweden' – this cheese has a fascinating history. The flavours are rich and fruity and complex, with a unique sourness, while the aroma, due to the maturation on the boards, has a delicate farminess.
  • La Chanteral | Col de Fach, Loubieres,, Unpasteurised Sheep Milk - 1 unit - 250g. Lightly washed rind to give a smooth finish to the cheese, this flavours are also light and almost melting, with a rich sweetness of the sheep milk. 
  • Lanark Blue | Lanarkshire, Unpasteurised Sheep Milk - 250g. Humphrey Errington’s powerful blue cheese is not for the faint hearted, but then not many cheeses would be a worthy partner to whisky. The sharp acidity & meaty vegetal flavours are truly Scottish in every way, & this cheese is best eaten right at the end of the meal as its flavours are quite overpowering.

WINE

  • La Grange Tiphaine Clef du Sol | Montlouis-sur-Loire. Amboise, Loire

    Grape: 100% Chenin Blanc

    There is plenty to love about this wine with its fruity forward side and good freshness and acidity.  The fermentation begins spontaneously and slowly in winter and finishes in summer. In total the wine remains on the lees in barrels for 10 months.

    The vintage was from a warm summer giving the wine a beautiful texture and complexity.  Perfect for white meats such as roast chicken, fish with creamy sauces, wild mushrooms and also with a varied cheese board.
